Giving back to West, Texas

It has been a little over a month since the massive explosion in West, Texas. Not only homes were destroyed, lives lost, the town was in rubble. Many many tragedies have happened in the past month, and this post seems overdue.

I remember how I felt when I saw the news, streams of tears turned into violent sobbing. I couldn’t imagine how devastated the residents of West, Texas felt, to have everything taken away in a flash. I also remember the bravery of the first responders, many were severely injured, some lost their lives while saving others. Yet how quickly, this town is being forgotten, buried under other tragedies and headlines.

Today, MKliving would like to remember those in West, Texas.  In the midst of our busy lives, would you take a moment to pray for those affected by the explosion? For their lives to be rebuilt, hopes restored, and peace of mind. Let’s not forget other tragedies around the country, the flood in the Midwest back in April, and the Boston Marathon bombing …etc. And if you are able to lend a hand, would you also consider carving out some time, and resources?

Though it is not much, but the love of many can amount to something great.

MKliving wants to thank all who have supported our spring collection. Your support is going to West, Texas, to refresh the weary souls.

Slowly adjusting & an iron-rich stirfry for pregnant moms

The blog has taken a longer vacation than I myself. We came back from Asia close to a month ago, and it has taken us this long to adjust. Besides fighting jet lag, getting back to daily routine, we are also facing new chapter ahead – parenthood.

Needless to say, it is a time of excitement coupled with trepidation. Will we be good parents? How will we ever be able to afford kid’s education? More importantly, will we be able to raise up God-fearing/loving child? Instantly, my brain frazzled.

In addition to the mental preparation, we are also making our home more baby ready. I am SO THANKFUL that child bearing takes 10 months, there are just too much to adjust to!

For instance, pregnancy diet. I, being a preggo novice, had a bit trouble gauging how much to eat in my first trimester, and gave in to many burger/fried chicken cravings. Now, I am finally getting a hang of eating healthy and eating right. Whew~

I want to share a recipe that I recently created while making meals. As most women know, iron  is extremely important in preggo diet. We need a lot more of iron in order to make more red blood cells for the little one in our belly. The Ob/Gyn often prescribe us iron supplements. I, for some odd reasons, have pill aversion since growing up. So I have been looking for ways to enhance iron absorption through my diet. At first, I ate a lot of spinach, but after some research, I find that in order for us to absorb the rich iron in spinach and other veggies, it has to be prepared with vitamin c (i.e. lemon juice) and protein. See the article here.

So the following recipe is how I modified my usual stirfry to enhance iron absorption. I reduced the sodium and the cooking time in this recipe, so more nutrients are preserved, and less water retention for the pregnant moms.

Chinese stir-fry with shabu beef, power greens for pregnant moms

Ingredients (4 servings)

  • Pre-wash/pre-cut power greens from Trader Joe (1 pk = 5 oz)
  • image
  • baby carrots, halved (1 cup)
  • half a fist of ginger, julienned
  • sliced sukiyaki beef (I chose this for ease of cooking, they come thinly sliced, but other cuts like beef sirloin will do as well) (1/2lb)
  • 4 cloves of garlic, crushed and chopped (2 tbsp)
  • Sea salt, 1 tsp
  • cornstarch 1/2 tbsp (for marinate)

Condiments:

  • low sodium soy sauce, 1 tbsp for marinate
  • cooking wine, 1 tbsp for marinate
  • black sesame oil 1/2 tbsp for marinate, 1/2 tbsp for stirfry
  • lemon juice, 1/2 tbsp for marinate, 1/2 tbsp for stirfry
  1. Make marinate: Mix together cornstarch, soy sauce, black sesame oil, cooking wine, and lemon juice until cornstarch is dissolved.
  2. Add the beef into the marinate and mix well. Let it sit for 15 min or more.
  3. Oil the pan (enough to coat the entire pan) on med-high heat, add 1/2 of the ginger and cook until fragrant. Add the meat and carrots, stir fry until all cooked. Set aside including the cooking juice.
  4. Oil (add 1/2 tbsp black sesame oil) the pan again on med-high heat, cook the rest of the ginger and garlic until fragrant, add the veggies. Quickly coat the veggies with oil, add lemon juice, salt. Once veggies are cooked, turn off the heat. While pan is hot, add the meat, carrot and the cooking juice into the pan and mix well.
  5. Remove pan from hot stove. Voila~

DH and I both enjoyed this stirfry very much even though I cut a considerable amount of sodium in this recipe. The fragrant ginger and black sesame oil make this dish very flavorful, and the lemon juice added to the stir-fried veggies made it very refreshing and light. I hope you will all enjoy this easy recipe.

There will be more updates from MKliving but for today, this preggo lady has to take care of other business. =)

…. until next time~

MKliving 2013 Collection….. now live until March 28th

The Spring 2013 Collection is finally in the shop. I am extremely proud of this collection, not only because they are all made by my hands, but more so because they represent MKliving’s aesthetics and living philosophy. Simplistic and stylish.

Using mostly 100% cotton (with the exception of embellishment), each piece allows for maximum comfort and breath-ability. I hope you will enjoy them as much as I do.

While making them, I selfishly was hoping to keep some of the design. Hubby reminded me that I am making them for hungry children around the world, and the profits will be donated to charities we are committed to.

Sorting carrots for local food bank

Yesterday, along with some youth from church and friends we went to the local food bank to volunteer. It was my personal first, and I think it will be the first of many to come. Some of us did quality control of the donated canned and dried food, throwing away the expired and suspicious looking ones. We also saw many unusually interesting items. One sad thing was that we had to throw away a lot of outdated food. A lot were couple years over expiration :(. Besides sorting, and putting together boxes of packed dried & canned food for families, we also sorted fresh produce. Our group did mainly the carrots, lots of carrots…5000 lbs of them. :)

Besides physical labor, we had opportunities to meet other groups of people at the food bank, one in particular was BuildOn. The high school senior we met shared that the group meets every Saturday to volunteer in local community projects that help the needy. Inspiring.

There were many parent-children teams that worked with lightning speed, while us adults slowed as time went on, the kids were racing to finish all the produce. They were filled with enthusiasm with only one goal: do as much as they could in the limited time. It’s our hope that when our family expands, we will also bring our little ones along to instill in them the lifestyle of giving back.

Here are some pics of what we did yesterday. I would be okay not eating carrots for a while :p

Stocking shelves, thanks to you <3

Thank you all who have supported the MKliving shop from the last release, and in return, we have used the humble profits to stock the shelves of health clinics in needy communities through World Vision (to learn more about World Vision, be sure to click on the link and the below pic for video)

Here is a video to show what YOU have done for these children and their family =)

The following is a brief description of from World Vision:

“Your gift goes 12 times as far! Every day, thousands of children die because they do not have access to basic medicines that could save their lives. Your gift will multiply 12 times to help ship and distribute essential pharmaceuticals and medical supplies like: antibiotics, anti-fungals, anti-parasitic drugs, de-worming medications, disposable syringes, gastrointestinal drugs, painkillers and surgical supplies.”

Thank you from the bottom of our hearts.

Let’s continue to touch lives together

Shalom~~
